Ingredients
- 1 cup water (200 ml)
- 1.5 cups flour
- 100 g butter
- 1 packet vanilla
- 1 pinch salt
- 4 egg
- 2 and a half cups milk
- 1 heaped tablespoon flour
- 1 tablespoon cocoa
- 2 heaped tablespoons starch
- half tea glass sugar
- 1 egg yolk
- 1 packet cocoa whipped cream
- 150 g mixed dark and milk chocolate
- 30 g kadar white chocolate
Preparation
- For its dough, we boil the water in a pot after adding water, butter, and one pinch salt until the butter melts.
- After the butter melts, add the flour gradually and stir. Once it reaches the right consistency, take it off the heat and let the dough cool down.
- After it has cooled, feed the eggs one by one. Then, put it in a whipped cream bag and adjust its length according to your own wish. I made it a bit long, it turned out 21 pieces. Arrange them in rows on the tray.
- put 160 degrees in the oven. definitely do not open the oven door, mine cooked in approximately 42 minutes. if the insides are not slightly cooked, it will collapse after taking it out, cook carefully.
- For its cream. We take milk, flour, starch, egg yolk, cocoa, sugar into a pot and cook until it reaches the consistency of milk pudding.
- After removing from the stove, add butter and whisk well. After it has cooled down a bit, add whipped cream and whisk 5 minutes.
- Cut the cooked eclair dough thinly and lengthwise, put the milk pudding filling inside, and close the top.
- We melt the chocolate using the bain-marie method and dip the top of the eclairs into the chocolate.
- You can melt optional white chocolate on top, put it in a plastic bag, cut the tip small, and use it as a decor. one night I waited, it becomes an incredible flavor. To those who will try it
