You’re going to make a delicious dessert with that light and fluffy texture. Let’s head to the kitchen for the recipe for crispy profiterole balls.
Ingredients
- 1.5 tablespoons butter (at room temperature)
- 1 heaping tablespoon granulated sugar
- 1 heaping tablespoon peanut butter
- 2 heaping tablespoons flour
- 1/3 cup water
- 1/3 cup milk
- a pinch of salt
- 1/2 cup flour
- 2 eggs
- 1/2 cup granulated sugar
- 2 egg yolks
- 1 heaping tablespoon cornstarch
- 1 heaping tablespoon butter
- 1 packet vanilla
- 1 teaspoon peanut butter
- 25 grams white chocolate chips
- 1 packet chocolate sauce
- 100 milliliters milk
- 2 packets dark chocolate
Preparation
- First, let’s prepare the crispy dough. In a large bowl, mix the cold butter, sugar, and flour with a spatula. Add the peanut butter if desired, and use your hands to form the dough.
- Place two sheets of parchment paper on top of each other, roll out the dough with a rolling pin, and use a 3-cm cookie cutter to cut out circles directly on the paper. Carefully transfer the paper to the freezer for about 1 hour.
- For the pastry cream: Pour the milk into a saucepan and let it warm slightly. In a separate bowl, whisk 2 egg yolks. Add the sugar and mix well.
- Add the flour. Add the cornstarch and mix. Slowly pour the warmed milk into the egg mixture in a tempering motion, using a ladle.
- Transfer the mixture to a saucepan and cook over medium heat, stirring constantly, until it thickens.
- While the mixture is still hot, stir in the vanilla, butter, and white chocolate chips. Cover the surface with plastic wrap to prevent a skin from forming. Let it chill in the refrigerator.
- For the profiterole dough: In a saucepan, combine the butter, water, and milk, and bring to a boil. Add the flour and a pinch of salt; once the mixture thickens to a non-sticky consistency, remove it from the heat.
- Transfer it to a mixer. In a separate bowl, beat the eggs, then mix them into the dough mixture until it reaches a cohesive consistency.
- Transfer the mixture to a piping bag. Pipe the dough onto parchment paper, spacing the portions apart.
- Place the frozen cookie crisps on top of the piped dough. Think of them as little “hats.”
- Bake in a preheated oven at 190 degrees for 15 minutes, then open the oven door and bake for another 15 minutes at 170 degrees.
- You can serve the baked profiterole shells with pastry cream however you like—either by cutting off the top or filling them completely.
- For the topping, heat 250 ml of milk and 3 packages of dark chocolate in a saucepan, then add a little butter to the sauce—this will make it shinier and thicker.
