Italian Meringue

Ingredients
  • 3 egg whites
  • One finger's width less than a teaspoon of sugar for each egg
  • A pinch of salt
  • 4–5 drops of lemon juice
Preparation
  1. Separate the egg yolks from the whites and use only the whites. (Please be careful when separating them—not even a single drop of yolk should get mixed in, as the protein in the yolk prevents the whites from whipping up.)
  2. Add sugar and salt to the separated egg whites and cook them over a double boiler, stirring constantly until the sugar has completely dissolved. (Place a separate bowl inside a pot of simmering water and cook the mixture in this bowl, stirring constantly.)
  3. The bottom of the heat-resistant bowl placed inside the pot should not touch the boiling water—in other words, ladies, we’re using the steam from the boiling water below to melt the sugar into the egg whites.)
  4. If you’re having trouble visualizing this, you can search for “bain-marie cooking” or “bain-marie heating” and look at the images on search engines. To check if it’s ready, take a small amount of the mixture with your finger and examine its texture—there shouldn’t be any sugar granules left.
  5. Add the lemon drops to the mixture and beat with a mixer for 5–10 minutes.
  6. If you have a countertop mixer, beating for 4–5 minutes after this step is sufficient. If you’re using a hand mixer, it may take up to 10 minutes, depending on its power.
  7. When the whipped cream reaches a consistency—hmm, how should I describe it?—a thick foam, like shaving cream (I don’t think that’s too far off:D)—and loses its fluidity, forming a solid peak that stays on the whisk, the process is complete.
  8. Transfer the mixture to a piping bag and pipe it onto a baking sheet lined with parchment paper, leaving about a finger’s width of space between each.
  9. Set the oven to 100 degrees Celsius on the fan setting and bake until the cookies are dry. If you have even the slightest question about this, please don’t hesitate to ask, and please try my other recipes as well. Best regards.
