Profiteroles (with Homemade Chocolate Sauce)? This recipe, which is in the cookbooks of dozens of people, and...

Ingredients
  • 1 glass of water
  • 1 glass of flour
  • 100 g butter
  • 3 large eggs
  • A pinch of salt
  • 3 glasses of milk
  • 2 tablespoons cornstarch (leveled)
  • 1 package plain whipped cream
  • A little over half a glass of sugar
  • 2 tablespoons cocoa
  • 1 package vanilla extract
  • 1 teacup of sugar
Preparation
  1. Place 1 glass of water, 100 grams of butter, and a pinch of salt in a pot.
  2. Once it starts to boil, pour in one glass of flour and stir quickly.
  3. Stir vigorously for about 3–4 minutes, just like when making flour halva.
  4. Remove the dough from the heat and let it cool, stirring occasionally to prevent a skin from forming.
  5. Crack the eggs into the cooled dough one at a time, making sure each egg is thoroughly incorporated before adding the next.
  6. One of the key tips for making profiteroles is that the perfect profiterole dough is very runny—remember, it should be a dough that sticks to your hands.
  7. Once the dough is ready, line a baking sheet with parchment paper and use a dessert spoon to place the dough in spoonfuls—using two spoons at a time will make this easier.
  8. Bake the profiterole dough in a preheated oven at 200 degrees for half an hour without opening the oven door at all.
  9. After turning off the oven, don’t open the door for a while so the pastries don’t deflate.
  10. Now let’s move on to the cream: mix all the ingredients except the whipped cream and cook them.
  11. Once the custard has cooled, pour in the whipped cream and beat with a blender until smooth.
  12. Now let’s make the chocolate sauce. I like my chocolate sauce for profiteroles to be a bit thick; if you prefer it more runny, you can increase the amount of milk.
  13. Add all the dry ingredients to 2.5 cups of milk, stir, and place the mixture on the stove.
  14. Cook while stirring constantly, then set aside to cool.
  15. Fill the baked profiteroles with the custard using a pastry bag; if you don’t have one, poke a small hole and fill them with a spoon.
  16. Place 3 or 4 in each cup and pour the chocolate sauce over them.
  17. It will look much better if you pour the chocolate sauce just before serving. Bon appétit to everyone who tries this recipe!
