Ingredients
- 1 cup milk ( MUST BE WARM )
- 1 tea glass vegetable oil
- 2 egg ( AT ROOM TEMPERATURE )
- A tip of a teaspoon of salt
- 1 tablespoon lemon juice ( we obtain it by squeezing the lemon )
- 1 teaspoon vinegar (grape or apple doesn't matter)
- As much flour as it takes ( It should be a dough that is slightly harder than an earlobe, not sticking to the hands ) The amount varies depending on the type of flour, regardless of the brand
- 150 g butter (melted and foam removed) 1 tea glass vegetable oil
- 200 g starch
- 2 cups coarsely ground walnuts
- 4 cups sugar
- 3.5 cups water
Preparation
- First, except for the flour, we take all the dough ingredients into a bowl and mix them well.
- We add the flour gradually and knead well, kneading is very important; the more we knead, the better it opens up.
- Afterwards, we gather the dough and divide it into 4 equal pieces.
- On average, it turns out to be 50 or 60 pieces. I made 60 pieces.
- We also make them into 15 very small dough balls and leave them to rest.
- The more it rests, the easier it opens.
- I prepared it in the morning and let it rest for 3 hours. Normally 45 minutes will be sufficient.
- Let's be careful to keep the doughs covered, so they don't dry out.
- We roll it out to the size of a plate with nişasta, sprinkle plenty of nişasta between them, and make 15 layers.
- When 15 pieces is completed, we roll it out with the help of a rolling pin by flipping it over and over.
- When they grow up a little, we continue rolling with a rolling pin.
- In the final stage, while wrapped around the rolling pin, we twist it left and right with our hands, and after removing it from the rolling pin, we shake it. (this process is done so they separate easily from each other)
- We place them one by one into a medium-sized baking tray, separating the layers and shaking them off.
- After placing 15 solidly, we sprinkle one third of the walnuts we prepared beforehand on top.
- We will repeat the same process on all 15 layers. Therefore, let's divide the walnut into 3 equal pieces.
- We roll out the other doughs in the same way and stack them on top of each other, sprinkle with walnuts, and after completing the last layer, we pour the melted butter and vegetable oil mixture (after skimming off the foam) while hot, and bake in a preheated 165 degrees oven on top-bottom setting for approximately one and a half hours.
- While the dessert is cooking, we start boiling the syrup, boil 7 – 8 minutes, and turn off the heat.
- After the first heat of the dessert has gone out, we can serve it after pouring the warm syrup and letting it rest for 2 hours.
