1 cup chickpeas 1 cup dry beans 3 cups wheat for ashure 1 cup peeled peanuts 1 cup hazelnuts (whole) 1.5 cups chopped apricots 1 cup raisins half a cup currants half a cup diced orange peel 1 cup diced apple 4 cups granulated sugar 1 tablespoon rose water (optional) a pinch of salt
Preparation
To make Ashure: Soak the beans and chickpeas in a single pot overnight. The wheat is washed and soaked in hot water the night before. The next morning, cook the beans and chickpeas in a pressure cooker until tender. Boil the wheat in the same manner. Boil the fruit in a saucepan for about 10 minutes until tender. Combine the cooked ingredients in a large pot. If the water is insufficient, add hot water. Once boiling, add the peanuts, hazelnuts, orange peel, apple, a pinch of salt, and sugar. Stir, boil for another 5-10 minutes, and then turn off the heat. If you prefer a thicker consistency, dissolve two tablespoons of wheat starch in a small amount of water and add it once boiling. Garnish with pomegranate seeds, cinnamon, currants, etc.
