Homemade Baklava with Antep Pistachios
A wonderful baklava recipe made with exactly 40 layers of dough, plenty of butter, and plenty of pistachios.
Ingredients
- 1 egg
- 1 teacup olive oil (small size)
- 1 teacup milk
- 1 packet baking powder
- 1 tablespoon vinegar
- 1 teacup cornstarch
- 2 water glasses of flour
- 100 g coarsely chopped pistachios
- 100 g butter
- 2.5 water glasses of granulated sugar
- 2 water glasses of water
- 3 drops of lemon juice
Preparation
- First, prepare the syrup for the homemade pistachio baklava.
- For the Syrup of Homemade Pistachio Baklava: Put 2 glasses of water and 2.5 glasses of sugar in a pot and stir until the sugar dissolves. If you don’t stir it during this process, the syrup will crystallize more quickly. Once the syrup begins to boil, reduce the heat and add 3 drops of lemon juice. Continue boiling for exactly 15 minutes. Once the syrup is ready, remove it from the heat. Let it cool.
- Meanwhile, crack 1 egg into a deep bowl. Then add 1 tea glass of olive oil, 1 tea glass of milk, 1 packet of baking powder, and 1 tablespoon of vinegar, and mix well. Next, gradually add 1 tea glass of cornstarch and 2 water glasses of flour, kneading until you have a dough that is soft like an earlobe and does not stick to your hands.
- Divide the prepared baklava dough into 5 equal portions. Then cut each portion into 10 equal pieces and roll them into balls with your hands. Roll out these pieces with a rolling pin, lightly dusting them with cornstarch as shown in the photos. Stack these 10 rolled-out dough pieces on top of each other, sprinkling cornstarch between each layer. Using a rolling pin or rolling stick, roll out the stacked dough again into a small, round shape the size of a baking dish. Place this rolled-out dough into the small baking dish. Sprinkle pistachios on top. Repeat the same process with the remaining 4 dough pieces, sprinkling pistachios between each layer, and place them in the baking dish.
- Cut the prepared pistachio baklava with a knife, as shown in the photos. Next, place butter in a skillet and melt it. Heat the melted butter slightly. Then, pour it gradually over the sliced pistachio baklava. Let it sit for about 5 minutes to allow the butter to be absorbed. Place it in a preheated 150-degree oven. Bake for about 1–1.5 hours, checking occasionally (until the top is completely golden brown).
- Remove the baked homemade pistachio baklava from the oven. Let it rest for 1–2 minutes. Then pour the prepared cold syrup over it. Let it rest for at least 2–3 hours.
- Sprinkle more pistachios over the prepared homemade pistachio baklava, and serve.
