A unique dessert recipe featuring kadayif and a syrupy glaze—one that’s a delight in every way, from its name and flavor to its preparation and presentation.
Ingredients
- 200 g butter (at room temperature)
- 1 egg
- 1 tea glass yogurt
- 1 tea glass vegetable oil
- 1 tea glass granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 4.5 cups flour
- 100 g raw kadayif
- Chopped walnuts
- 4 cups water
Preparation
- For the dough of the Telli Baba dessert: Place 200 grams of butter at room temperature in a deep bowl. Crack 1 egg into it. Add 1 tea glass of yogurt, 1 tea glass of vegetable oil, 1 tea glass of granulated sugar, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and gradually add about 4.5 water glasses of flour, kneading until you have a fairly soft dough that doesn’t stick to your hands.
- Next, break up 100 g of raw kadayif into small pieces by hand. Take walnut-sized pieces from the prepared dough. Roll out the dough into a round shape in your hand or on the countertop. Place a pinch of raw kadayif and some crushed walnuts in the center, then seal the dough. Gently roll it into a ball in the palm of your hand. Place it in a greased baking pan with the sealed side facing down.
- Bake the prepared “telli baba” in a preheated 180-degree oven. Bake for about 25–30 minutes, or until the tops are golden brown.
- Meanwhile, to make the syrup for the "telli baba" dessert: Place 3.5 cups of granulated sugar and 4 cups of water in a saucepan. Bring to a boil, stirring constantly until the sugar dissolves. Once the syrup has come to a boil, let it boil for about 10 more minutes, then remove from the heat.
- Once the Telli Baba desserts are done baking, remove them from the oven and let them cool slightly. Then, using a ladle, pour the syrup—which should still be hot but not scalding—over each dessert. Let the desserts soak up the syrup, then set them aside to cool. After a while, turn the desserts upside down to allow them to absorb the syrup from that side as well.
- You can serve your Telli Baba dessert garnished with whipped cream or clotted cream.
