Ingredients
  • 350 g wheat
  • 700 g granulated sugar
  • 1,5 cups boiled dried beans
  • 1,5 cups boiled chickpeas
  • 5 tablespoons currants
  • 10 pieces dried figs
  • 24 pieces dried apricot
  • 150 g raw almonds
  • 1 cup rice
  • 1 piece orange
  • 1 piece apple
  • 4 liters water
  • 5 drops rose water
  • 4 cloves
Preparation
  1. To make Ashure dessert; first, put one night 350 g wheat into a bowl beforehand, and wash it 3-4 times in plenty of water.
  2. Then, place the wheat into a deep pot in which you will make the ashura. Pour hot water over it until it covers it by 4 fingers. Place it on the stove and let it boil. After it boils, take it off the stove and wrap the pot well with a cloth.
  3. Next, finely chop day 24 pieces apricot and 10 pieces dried fig. Let them soak in water for a while, then rinse. 150 g Soak raw almonds in hot water so that the skins come off easily. 1 piece Peel the skin of the apple and 1 piece orange, and cut them into small pieces.
  4. On the other hand, place the wheat pot on the stove. Add 5 tablespoons raisins, chopped apricots, and figs to the pot in order. Then pour 4 liters hot water and leave it to boil. Near boiling, add the peeled almonds and cook 10 minutes over medium heat. Throw in the chopped apples and cook 10 minutes longer. When the apples are almost cooked, add 1 and a half cups boiled chickpeas and 1 cup rice. When the rice is almost swollen, add the chopped orange and 1 and a half cups boiled dried beans, and continue cooking. The Ashura dessert will gradually take on a porridge consistency.
  5. If the water ratio of the Ashura is not sufficient for you, add boiling water to it. What you should not forget while adjusting the density is that the legumes and dried fruits you will put in will absorb the water and reduce it. Thus, you can adjust the consistency of the Ashura as you wish by adding boiling water. You can also adjust the amount of sugar.
  6. Stir frequently from bottom to top so that the bottom of the ashura does not burn. Finally, when the ashura dessert is close to cooking, add 700 g granulated sugar, 5 drops rose water and optionally 4 cloves, and after bringing 1-2 to a boil, remove from the heat.
  7. Distribute the ashura dessert you prepared into bowls and let it cool. Then, you can serve it by decorating the tops with hazelnuts, walnuts, pine nuts, raisins, and pomegranate seeds.

Güzel görünüyor, şekerini biraz azaltarak denemeyi düşünüyorum.
