2 large quinces 1 liter of water 1 cup of granulated sugar (can be increased according to your taste) 1 cinnamon stick 4–5 cloves Juice of half a lemon (to prevent the quinces from darkening)
Preparation
Prepare the quinces: Peel the quinces, cut them in half, and remove the seeds. Dice them. Place them in a bowl and drizzle with lemon juice to prevent browning. Cooking: Add the quinces, water, sugar, cinnamon stick, and cloves to a pot. Bring to a boil over medium heat. Adjusting the consistency: Once boiling, reduce the heat and simmer for 20–25 minutes, or until the quinces are tender. Finishing: Remove the cinnamon stick and cloves. Taste and adjust the sugar to taste. Serving: Serve warm or cold. If desired, garnish with a few fresh mint leaves or thin slices of lemon.
