Just as Izmir has its lokma, Balıkesir has its fiyonk dessert. It’s easy to make, generous in portion, and a practical, syrup-soaked fried pastry that leaves a wonderful taste on the palate.
Ingredients
- 1 egg
- 2.5 cups flour
- 1 packet baking powder
- 1 teacup yogurt
- 1 teacup olive oil
- 1 cup water
- 2 cups sugar
- 3 drops lemon juice
Preparation
- For the Bow-Shaped Dessert Dough: Crack 1 egg into a deep bowl. Add 1 tea glass of yogurt, 1 tea glass of olive oil, and 1 packet of baking powder.
- Then, gradually add 2½ water glasses of flour.
- Mix the ingredients briefly.
- Knead until you have a soft dough that doesn’t stick to your hands.
- Transfer the prepared dough to a floured work surface. Lightly flour the top and bottom of the dough.
- Roll it out with a rolling pin so it isn’t too thick.
- If desired, cut the dough into two equal pieces to make rolling it out easier.
- Then cut it into medium-sized squares.
- Pinch the center of each square of dough, as shown in the photos, to form a bow shape.
- Place the prepared bow-shaped dough pieces into hot oil. Fry them on both sides.
- Transfer the fried pastries into cold syrup.
- Toss the pastries in the syrup a few times, then transfer them to a serving plate.
- You can garnish your bow-shaped pastries with walnuts, ground green pistachios, or shredded coconut before serving.
