Poppy Seed Semolina Halva
A delicious halva recipe with just the right flavor and texture, thanks to the crunch of the poppy seeds.
Ingredients
- 1 cup semolina
- 3 heaping tablespoons flour
- 100 grams butter or margarine
- 4 tablespoons vegetable oil
- 1 heaping tablespoon blue poppy seeds
- 1.5 cups granulated sugar
- 2.5 cups milk
Preparation
- To make poppy seed semolina halva: First, pour 2½ glasses of milk and 1½ glasses of granulated sugar into a small, deep saucepan. Place it on the stove. Stir constantly until the sugar dissolves. You don’t need to bring the syrup to a boil. It’s enough for the syrup to be warm or lukewarm.
- Meanwhile, in a wide, deep pot, melt 100 grams of butter and 4 tablespoons of vegetable oil. Add 1 cup of semolina and 3 heaping tablespoons of flour to the melted fat. Toast the mixture, stirring constantly, until it turns a light coffee color.
- Once the toasted flour and semolina have turned a light coffee color, add 1 heaping tablespoon of blue poppy seeds and toast for about 1 more minute.
- Slowly pour the prepared warm or nearly hot milk syrup over the semolina mixture. Stir constantly until the syrup is absorbed.
- Once the poppy seed semolina halva has absorbed the milk, stir it one or two more times and remove it from the heat. You can serve it hot using a spoon or a bowl.
- If you prefer a darker color for your poppy seed semolina halva, you can roast it longer.
