Mixed Fruit Cheesecake? This recipe and...
Ingredients
- 200 grams of cookies
- 100 grams of melted butter
- 750 grams of quark
- 175 grams of cream cheese (frischkäse)
- 2 eggs
- 200 grams of sugar (1 water glass)
- 200 ml milk (1 water glass of milk)
- 1 packet vanilla powder
- Half a tea glass of vegetable oil
- 350 g frozen mixed raspberries
- 4 packets vanilla sugar
- Half a water glass of water
- 2 tablespoons cornstarch
Preparation
- Grind the cookies into a fine powder in a food processor, melt the butter, and mix it with the ground cookies. Press the cookie mixture evenly into the bottom of a cake pan using a glass, then refrigerate.
- Add all the ingredients for the cream to a mixing bowl and whisk by hand. Once the cream has a smooth consistency, pour it into the cake pan and wrap the sides of the pan with foil.
- Place a bowl of water on the bottom rack of the oven to prevent the cake from cracking.
- Bake on the bottom rack of a preheated oven set to 170 degrees for about 1 hour. Once the cheesecake is done, turn off the bottom heat and leave the oven door slightly ajar; let the cake cool inside for about half an hour.
- If you remove it while it’s still hot, the center of the cake will sink. Meanwhile, prepare the sauce: add the mixed fruit and sugar to a saucepan, bring to a gentle simmer over medium heat, and blend with a mixer.
- Mix half a glass of water with the cornstarch until well combined, then add it to the fruit mixture. Stir until the mixture thickens. Pour the sauce over the cooled cheesecake and spread it carefully. Let it set in the refrigerator for 5–6 hours.
