Lemon Cheesecake? The Lemon Cheesecake Recipe and...
Ingredients
- 1 package of oatmeal cookies
- 50 g margarine or butter
- 1 liter of milk
- 1 water glass of semolina
- 1 water glass of sugar
- Grated lemon zest
- 2 glasses of water or milk
- 2 vanilla pods
- Half a glass of lemon juice
- 2 tablespoons (not heaping) of cornstarch
- 3 tablespoons of sugar
Preparation
- First, grind the cookies in a food processor and mix them with melted margarine. If you have a springform pan, use that; otherwise, a glass baking dish or anything similar will work—spread the mixture to form the base.
- Next, we’ll make the classic milk and semolina pudding: 1 liter of milk, 1 glass of semolina, 1 glass of sugar, grated lemon zest, and vanilla. Bring this mixture to a boil on the stove until it thickens, then spread it over the cookie crust.
- Chill it in the fridge until you’re ready to make the lemon sauce on top; if it hasn’t set yet, it can stay in the fridge a little longer.
- Boil 2 cups of water or milk (you can use 1 cup of water and 1 cup of milk), lemon juice, cornstarch, sugar, and vanilla until it thickens. Then pour it over the dessert. You can garnish it with lemon slices and mint :)
