A delicious treat that melts in your mouth—a recipe that’s snow-white and looks like a cookie, just like cotton candy.
Ingredients
- 3 egg whites
- 1 cup granulated sugar
- a pinch of salt
Preparation
- To make meringue, carefully separate the yolks from the whites of 3 eggs at room temperature. Not even a single drop of egg yolk should get into the egg whites; otherwise, no matter how much you beat them, they won’t stiffen as much as you’d like. Be sure to use fresh eggs. Place the egg whites in a deep bowl.
- Add a pinch of salt to the egg whites and begin beating them on high speed with a mixer.
- When they start to foam slightly, gradually add 1 glass of granulated sugar in 4–5 batches.
- Beat until the mixture reaches a whipped cream consistency. The whipping process will take at least 15–20 minutes. The reason it takes so long is that granulated sugar dissolves slowly.
- If the mixture has the consistency of whipped cream—that is, if it doesn’t run out of the bowl when you turn it upside down—it’s ready.
- Next, fill a piping bag with the mixture. Pipe it onto a baking sheet lined with parchment paper, making sure the meringues aren’t too large.
- Place the prepared meringues in a preheated 100-degree oven. Bake for about 1 hour and 10 minutes. Cooking times may vary depending on the oven.
- Remove the baked meringues from the oven and let them cool.
- Once the meringues have cooled completely, remove them from the baking sheet and serve.
