Güllac from the Ottoman Cuisine and Its History? This recipe and...
Ingredients
10 güllaç sheets
8 glasses of milk
2.5 glasses of sugar
1 bowl of coarsely chopped hazelnuts
3 tablespoons of coconut (optional)
2 tablespoons of rose water (optional)
Coarsely ground hazelnuts, cherries
You can also serve this with any ingredients you have on hand.
Preparation
Pour 8 cups of milk into a pot and add the sugar.
It will reach a consistency where it won’t burn your finger until the sugar dissolves.
Add the rosewater and turn off the heat.
Take a güllaç sheet and place it in a baking dish; using a ladle, pour the milk over it so that it covers every part of the sheet.
Repeat this process until you have five layers. Sprinkle the coarsely chopped hazelnuts evenly over the top.
Add the remaining güllaç sheets and pour the milk over them using a ladle.
Let it rest in the refrigerator for about 1 hour, then decorate as desired and serve. (Garnishing this dessert with pomegranate seeds is also an Ottoman tradition.) I garnished mine with the ingredients I had on hand, just so you know. Note: The longer the güllaç rests, the better and more flavorful it becomes.
