Pastry Shop Şekerpare

A pastry shop-style şekerpare—with the perfect size and texture, and soaked through with syrup—just like the ones you buy ready-made from the same bakery. Once you try making it at home, you’ll find it’s both very easy and much more economical. Plus, it’s just as delicious as the store-bought ones—if not even better.

Ingredients
  • 100 g butter (at room temperature)
  • 2 tablespoons vegetable oil
  • 1 egg
  • 2 tablespoons semolina
  • 1/2 cup powdered sugar
  • 1 packet baking powder
  • 1 packet vanilla
  • 2.5 cups flour
  • 2.5 cups granulated sugar
  • 2.5 cups water
  • 4 drops lemon juice
Preparation
  1. To make Şekerpare, start by preparing the syrup. Put 2½ water glasses of granulated sugar into a deep pot.
  2. Pour 2½ water glasses of water over the sugar. Add 4 drops of lemon juice and stir.
  3. Place the syrup on the stove and stir until the sugar dissolves. Then bring the syrup to a boil. Once it boils, let it boil for another 3–4 minutes. Then remove it from the heat and let it cool. The water glass measurement used in this recipe is 200 ml.
  4. For the pastry dough: Place 100 g of room-temperature butter in a deep bowl. You can use margarine instead of butter. Then add 2 tablespoons of vegetable oil and 1 egg. Mix all the ingredients in the bowl thoroughly.
  5. Next, add 2 tablespoons of semolina, half a water glass of powdered sugar, 1 packet of baking powder, and 1 packet of vanilla to the bowl.
  6. Mix the ingredients in the bowl thoroughly once more.
  7. Finally, gradually add 2½ water glasses of flour to the bowl.
  8. Knead until you have a soft dough that doesn’t stick to your hands. Don’t make the dough too firm by adding too much flour.
  9. Next, take pieces of dough about the size of a walnut. Roll the dough in the palm of your hand to shape it lengthwise. Gently press down on them with your hand to flatten them, then taper the ends to give them an oval shape.
  10. Arrange the prepared dough pieces on a baking sheet lined with parchment paper. Brush them with egg yolk.
  11. To make the şekerpare look nice, score them lengthwise with a fork.
  12. Bake in a preheated 180-degree oven until the top and bottom are nicely browned.
  13. Then remove the baked Şekerpare from the oven and transfer them to a work surface. Let them rest for just about 2 minutes.
  14. Immediately afterward, arrange the Şekerpare in a suitable baking dish. Pour the syrup—which has cooled to room temperature—over them, ensuring it coats every part of the sweets. Let the pastries sit for 3–4 hours until they’ve absorbed the syrup and cooled completely.
  15. You can serve your homemade pastry shop-style şekerpare by garnishing the top with ground pistachios or shredded coconut.
