Ingredients
- 1 glass of water
- 125 grams of butter
- 1.5 glasses of flour
- 1 tablespoon of sugar
- A pinch of salt
- 4 medium eggs
Preparation
- For our profiterole dough: Place 1 glass of water and 125 g of butter in a medium-sized saucepan and heat until the butter melts.
- Turn the heat to medium and bring to a boil for 2–3 minutes.
- Add the sugar and salt, stir to combine, then sift in 1.5 cups of flour.
- Stir the dough until it comes together, then cook over low heat for 3–4 minutes, stirring constantly to prevent burning, until partially cooked. Set aside to rest.
- Once the dough has cooled slightly (10 minutes), add the room-temperature eggs one at a time. Meanwhile, beat the mixture on the highest speed of the mixer until fully incorporated.
- Using a mixer is essential during this process to prevent the eggs from curdling and to ensure the right consistency of the dough.
- Transfer the dough to a piping bag (you can also use a double spoon) and pipe it onto a baking sheet lined with parchment paper in shapes slightly smaller than a walnut.
- Since the dough will rise, it’s best to pipe them with a little space between them.
- Bake in a preheated 180° oven for 40–45 minutes without opening the oven door. Reduce the temperature to 160° for the last 10 minutes.
- Once the dough has browned and risen, let it cool in the oven with the door open until it reaches room temperature.
- After completing all these steps, you can combine it with the cream.
