For the Dough: 1 cup all-purpose flour, 1 cup semolina, 1 tablespoon granulated sugar, 1 teaspoon dry yeast, 1.5 cups lukewarm water. For the Filling: 1 cup coarsely chopped walnuts. For the Syrup: 2 cups granulated sugar, 2 cups water, a few drops of lemon juice.
Preparation
For the syrup, boil the sugar and water. Add the lemon juice and boil for another 5 minutes, then let it cool. Mix the flour, semolina, sugar, and yeast. Add lukewarm water and knead until you have a runny dough. Cover and let it rise for about 30 minutes. Pour small ladlefuls of the dough into a non-stick pan. Cook only one side. Place walnuts on the uncooked side of the cooked dough, fold in half to form a crescent shape, and press the edges together. Fry in hot oil until both sides are golden brown. While still hot, place in the cold syrup and let it soak for a few minutes. You can sprinkle pistachios on top when serving. Tip: To ensure the stone kadayıf is soft, always place the hot dessert in the cold syrup.
