Oreo Cake? The Oreo Cake recipe found in dozens of people’s cookbooks and...
Ingredients
- 210 g flour
- 100 g cornstarch
- 170+170 g granulated sugar
- a pinch of salt
- 9 eggs
- 1/2 (half) teacup hot water
- Note: Since it didn’t fit here, I’ve added the sponge cake recipe to the comments—you can find it there
- 3 cups milk
- 2 heaping tablespoons cornstarch
- 3/4 (half plus a quarter) cup granulated sugar
- 2 egg yolks
- 2 heaping tablespoons labne (I use mascarpone)
- 1 package whipped heavy cream or whipped cream
- 2 packets vanilla
- Whipped cream, fruit, and Oreo cookies
- Assorted wafers, chocolate, and strawberries
Preparation
- Carefully separate the egg yolks from the whites.
- Add a pinch of salt to the egg whites and beat with an electric mixer for about 1 minute. Then, slowly add 170 grams of granulated sugar, one tablespoon at a time, and continue beating for about 4–5 minutes until the mixture reaches the consistency of shaving foam.
- Next, add the remaining 170 g of granulated sugar to the egg yolks and beat until the mixture reaches a mayonnaise-like consistency.
- Once it reaches a mayonnaise-like consistency, add hot water and stir quickly again.
- Gently fold the egg yolks into the egg whites.
- Finally, sift the flour and cornstarch into the cake batter and mix slowly with a wooden spoon until well combined.
- Then, pour the batter into a springform pan lined with parchment paper and bake in a 180-degree oven for 35–40 minutes.
- To prepare the cream: First, whisk together the milk, egg yolks, flour, and cornstarch over heat until the mixture thickens.
- Then, add half a glass of granulated sugar, stir to combine, and remove from the heat.
- Once it has cooled slightly, add the labne and vanilla, then set aside to cool completely. (It should be whisked frequently with a mixer during this time.)
- Finally, whipped cream is added to the thoroughly cooled cream, mixed well, and chilled in the refrigerator for 15–30 minutes.
- Preparing the cake: Cut the cooled sponge cake into three equal layers with a knife.
- Place the first layer on a suitable plate, spread the thoroughly cooled cream on top, and add fruit and Oreo pieces as desired.
- Before adding the next layer, spread whipped cream over the cake, cover the fruit and Oreos with it, and repeat to complete the three layers.
- Cover the top with whipped cream and decorate with assorted chocolates, wafers, and Oreos.
