Velvet Mini Cupcakes? This recipe, which is in dozens of people’s cookbooks, and...
Ingredients
- 3 eggs
- 4 tablespoons sugar
- ½ cup milk
- Red food coloring
- 1 tablespoon cocoa
- 1½ cups flour
- 1 packet baking powder
- 1 egg yolk
- ½ packet heavy cream or whipped cream
Preparation
- Beat the eggs and sugar for 4 minutes.
- Slowly add the food coloring to the milk until it turns red, and continue beating.
- Add the milk (with the food coloring) to the previously beaten egg and sugar mixture and stir to combine.
- Add the flour, cocoa, and baking powder to this mixture and beat until combined.
- The cocoa gives the cake a deeper red color and a rich flavor.
- Spread the batter onto a baking sheet lined with parchment paper to a thickness of 2 cm and bake at 180 degrees for 15 minutes.
- While the cake is baking, you can make the custard.
- Add all the ingredients except the cream to a saucepan, stir, and cook over medium heat.
- Turn off the heat, let it cool, then add the cream or whipped cream and beat with a mixer.
- Remove the cake from the oven and let it cool for about 10 minutes.
- I had a round cookie cutter; if you don’t have one, you can use a glass to cut out round shapes.
- Cut round pieces from the cake and use a knife to split each one in half.
- Pipe the custard filling between the layers and decorate as desired.
